New recipe from our academy chef: Gazpacho

Do you want to eat a more balanced diet? Do you suffer from allergies or intolerances? Do you want to change how you eat? Then our nutritional advice may be for you. 


  • 1 chopped cucumber
  • 400g tinned tomatoes
  • 400g fresh tomatoes
  • 4 red peppers
  • 2 onions (diced and sautéed in olive oil)
  • 1/4 litre vegetable stock
  • 4tbsp olive oil
  • 1 or 2 garlic cloves (to taste)
  • Salt and pepper
  • A splash of white wine vinegar
  • 2 slices of toast


Gazpacho is a soup which is popular in southern Spain and Portugal. The dish is made with raw vegetables, which means that preparing the soup is incredibly easy. Chop your ingredients, mix them all together and allow to stand for two hours. Then mix the ingredients one more time, and pour the soup through a sieve. Your soup is ready!
